Need a quick and easy meal to throw in the oven? This recipe is my new go-to, so simple and so yummy! I have a love of Mexican food and this meal was super satisfying.
What you need:
1lb cooked chicken breast, chopped or shredded
4 c. cooked brown rice
1 can drained black beans
1 c. plain Greek yogurt (can substitute with sour cream)
4oz can green chilis, diced
3/4 c. frozen corn
3/4 c. salsa
1c. shredded cheddar cheese or try pepper jack! (shred extra to sprinkle on top)
What to do:
Preheat oven to 350 degrees. Combine all ingredients in bowl and mix together. Be sure yogurt and cheese are mixed in thoroughly. Put into casserole dish and distribute evenly but do not pack down. Sprinkle extra cheese on top to desired amount. Bake for 20-25 minutes until cheese has melted.
Fix her up and top with sour cream, extra cheese, Fritos, or taco sauce! Whatever you prefer!
