I love a good bowl of hot soup and this round of winter weather has me in need of warming up. I pulled out the Dutch oven and made a nice pot of baked potato soup. You can find my recipe here.
*soup side note- try using frozen southern style diced hashbrowns instead of potatoes for a quicker and easier soup!*
This yummy supper required an equally delicious side. So I tried my first batch of cheddar cheese biscuits and boy are they delicious! And so quick!
What you need:
2 c. Hungry Jack Pancake Mix or pancake mix
1 tbs. brown sugar
3/4 c. milk
1 c. shredded cheddar cheese
1/4 c. melted butter
1/2 tsp. garlic powder
1/4 tsp. salt
1 tsp. chopped parsley
What to do:
Preheat oven to 400 degrees. In a medium bowl stir together pancake mix, sugar, milk and cheese until soft dough forms. Drop dough by rounded spoonfuls onto ungreased baking sheet. Bake 10-12 minutes or until golden brown. In small bowl, combine melted butter, salt, garlic powder and chopped parsley. Brush mixture over warm biscuits and serve!
